Pumpkin Mochi Rolls

Recipe makes 10 large rolls

Ingredients

  • 1 bag Mochi Mix
  • 15 oz can pure pumpkin
  • 7 oz condensed milk
  • 2 large eggs
  • 1/2 tsp vanilla (optional)
  • 4 tbsp salted butter
  • Cream cheese frosting
  • Toppings of your choice

Directions

Step 1: Preheat oven to 350º and prepare a 10x15 inch cookie sheet by greasing and lining with parchment paper.

Step 2: Empty Mochi Mix into a large bowl.

Step 3: Put butter in microwave safe bowl and microwave for 45 seconds or until melted.

Step 4: Add eggs to separate bowl and mix well.

Step 5: Add pumpkin, condensed milk, beaten eggs, melted butter, and vanilla to large bowl w/ Mochi Mix. Mix batter until smooth.

Step 6: Pour batter evenly onto cookie sheet and lightly tap on table to remove air bubbles. 

Bake for 25 minutes.

Let cool for 1-hour

Step 7: Spread cream cheese frosting evenly over your sheet of mochi and sprinkle toppings such as chocolate or nuts over the frosting. Carefully roll mochi and cut into slices before serving.
